View Full Version : Tofu
I just remembered..if you havnt tried tofu...you can try this...
chopped tofu (drained), eggs (how ever many you guys decide you wanna eat, cheese (optional), low-fat or full-fat bacon (optional), spinach (washed and drained), flour tortilla.
Cook up your eggs...in another pan...cook bacon (drain the bacon if you want) and add chopped tofu and spinach to pan to warm...don't overcook the tofu! If you drain your bacon..take it out of pan...spray pan with pam if you need to and then add the tofu and spinach.
Stuff your tortilla, add the cheese..hot sauce if you want...and EAT!

Anyone like to eat sushi? I'm sure there have got to be some bodybuilders here who do, I see them a lot in some sushi spots. There's tofu in the miso soup. ;)
Had to chime in...being part Korean, I grew up on dishes that contained good amounts of tofu. Many ways to prepare it and enjoy the meal.
That's a good recipe you have there Toni69...sounds like a tofu enchillada. :D

tofu's not bad; i like it in a salad in the summer as my last meal.
Finally...some support! LOL!
Tofu is good as a protein source in a stir-fry. It can be used by itself with veggies, or in addition to chicken or beef.

I love tofu.
It's healthy. Great protein source and if you get it at the right place... it is extremely cheap as well. Plus it's easy to prepare. GET YOURS!

I promise...it is not bad and really a good source of protein and fat. You can buy the firm stuff, which is what I like..drain it...and it has absolutely no taste. It will taste like whatever you season it with. it's like a sponge...it soaks up whatever you add to it..I guess that may sound gross..like eating a sponge. Hmmmm, just make my darn stuffed burrito/tortilla thingy I made up and I swear you will love it. It fills you up too when you add it to the eggs and cheese and bacon.
Ok, its almost the same texture as eating fresh mozzerella in the water, unsalted.
I think 3oz is somethinhg like 50 cal., 2.5 fat, 2 carb and 6 protein. I know for most of you heavy lifters it is not much..but that means, you can just eat that much more of it!
Great for including in your pre-contest diet meal plan...ok..I said my piece...or peace? forget it.
Try the tofu!
lol

I like to eat tofu every once in a while just for a change from beef and chicken.
I've always been a fan of tofu... Tastes great mixed with eggs or even mixed with lean beef and veggies.
Good recipe Toni, I'll be giving it a shot.

Well in my country just about everybody eat tofu on a regular basis... fried, mixed with vegetables, steamed, stewed... you name it.
Think I'll try your recipe, it makes me hungry already...
yeah tofu is scary to me as well, but my favorite teacher in high school, he was a fucking metal head and an animal, he was a shorter guy, but lean. and he was a straight up vegan, and told me to eat tofu instead of meat, and i mean i should maybe listen cause he put up some MAD numbers in the gym.
i mean besides him bein an animal, his diet and nutrition prolly helped him out a good deal too

Do not eat in chinese restaurants during contest prep! Make your own meals from now on. Those places have way too much sodium and msg...stay away!
Buy tofu and make your own stuff. I provided a nice recipe here and so did someone else in the recipe thread.
Hey Toni, Anymore Tofu Recipes?
I don't care for it, but a buddy of mine eats it all the time, fried in honey.

Yep, I'm a tofu man. But guys. You should know that NOT ALL TOFU TASTES BAD. There are ones like "Bocaburgers" and a few others that taste just like the real thing and have a TON MORE PROTEIN in them. If you don't believe me just chip out 3 dollars at your nearest walmart of publix and check them out. They even have chili and ground beef that tastes awesome. Plus it's premade so you only have to cook it. (Not to mention that they're great cheat foods for people who are cutting and still want a burger or two ;)
I will post more if you want. it wasnt a big hit so this is why I left it alone. I will post later today for those who are interested.
No prob! I want my boys to eat! ;)
Ok...upon request of course...LOL
1lb extra firm reduced-fat water-packed tofu, drained and cut into 1/2-inch cubes
1 1/2 tsp canola oil
1 tsp dark sesame oil
2 tbs low-sodium soy sauce
1 tbs rice vinegar
Place tofu on several layers of heavy-duty paper towels. Cover tofu with additional paper towels, and let stand 5 minutes, pressing occasionally.
Heat oils in a large nonstick skillet over medium-high heat. Add tofu; sauté 7 minutes or until browned. Place in a bowl. Drizzle with soy sauce and vinegar; toss gently to coat. Cover and chill at least 1 hour, stirring occasionally.

The secret to this dish is to slice the tofu very thin, then bread it thickly. Water-packed firm tofu works best here; the silken tofu is just too delicate.
1 (14oz) package firm tofu, drained
1 cup breadcrumbs (or about 2 slices stale bread, ground in a processor)
1/4 cup grated fresh Parmesan cheese (I prefer fresh, you can use the other stuff)
1 tsp dried marjoram
1/2 tsp dried savory or rosemary (savory is optional..its actually a blend of rosemary and thyme)
1/4 tsp dried thyme
1/4 tsp black pepper, divided
1/4 cup fat-free milk
1/8 tsp salt
2 large egg whites, lightly beaten
1/4 cup all-purpose flour
pam
3 tbs fat free or light mayonnaise
1 tbs chopped fresh chives or chopped red onion
1 tsp low-sodium soy sauce
1 small garlic clove, minced
4 (2oz) sesame buns
romaine lettuce leaves
slices plum or other ripe tomato
To prepare tofu, cut crosswise into 12 slices. Place a large nonstick skillet over medium heat. Add tofu; cook 5 minutes on each side. Remove tofu from pan; cool to room temperature.
Combine the breadcrumbs, Parmesan, marjoram, savory, thyme, and 1/8 teaspoon pepper.
Combine 1/8 teaspoon pepper, milk, salt, and egg whites. Place flour in a shallow dish; dredge 1 tofu slice in flour. Dip in milk mixture; dredge in breadcrumb mixture. Repeat procedure with remaining flour, tofu, milk mixture, and breadcrumb mixture. Place a nonstick skillet coated with cooking spray over medium heat until hot. Add tofu; sauté 3 minutes on each side.
Combine mayonnaise, onions, soy sauce, and garlic. Spread 1tbs mayonnaise mixture evenly over cut sides of each bun. Arrange lettuce and tomato slices over bottom half of each bun; top each with 3 tofu slices. Cover with tops of buns. Serve immediately.

Fettuccine and Tofu with Finger-Licking Peanut Sauce
You can EASILY substitute chicken, pork, or shrimp for the tofu and almost any kind of pasta for the fettuccine. Or add vegetables of your choice.
1/2 cup fat-free, less-sodium chicken broth
1/4 cup chunky peanut butter
1/4 cup low-sodium soy sauce
3 tbs brown sugar
2 tablespoons rice vinegar
2 tsp grated peeled fresh ginger
2 tsp chile paste with garlic
4 garlic cloves, minced
8oz UNCOOKED fettuccine
1lb firm tofu, drained and cubed
1 cup sliced green onions
1 cup shredded carrot (optional)
Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently. Remove from heat.
Cook pasta in boiling water 8 minutes as directed (omit any oil. You can salt the water). Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently.
4 servings (serving size: 2 cups)
CALORIES 465; FAT 15; PROTEIN 23g; CARBOHYDRATE 61g (Im guessing here)
Again...you can easily substitute tofu with any other meat.
1 (10oz) package extra-firm light tofu, drained and cut into 1/2-inch cubes
1 tsp ground cumin
1 tsp chili powder
1/2 tsp ground cinnamon
2 tsp cider vinegar
2 tsp canola or safflower oil
1 cup sliced onion, separated into rings
1 cup (3 x 1/4-inch) julienne-cut red bell pepper
1 cup (3 x 1/4-inch) julienne-cut zucchini
1/2 cup salsa of your choice
1/4 tsp salt
4 (8-inch) fat-free flour tortillas
1/4 cup sliced green onions
1/4 cup low-fat or fat free sour cream
1/4 cup shredded reduced-fat Monterey Jack cheese or other cheese
I add canned organic black beans, (drained and rinsed) here too
Place tofu in a shallow dish. Sprinkle with cumin, chili powder, cinnamon, and vinegar. Toss gently to coat; set aside.
Heat oil in a large nonstick skillet over medium heat. Add onion; sauté 2 minutes. Add bell pepper and zucchini; sauté 4 minutes. Stir in tofu mixture, salsa, beans and salt; cook 2 minutes, stirring occasionally. Remove from heat.
Warm tortillas according to package directions. Spoon about 3/4 cup tofu mixture down center of each tortilla. Top with 1 tbs each of green onions, sour cream, and cheese; roll up.
4 servings (serving size: 1 burrito)
