Im bulking right now and eat 2 whole rotisserie chickens a day, someone told me theyre bad for you and have to much fat? I thought it was just like baked chicken? Should I stop eating it or not?
Its not that its terribly bad for you per se....just that you dont know what types of oils are being used and how much salt was added to the chicken..or water for that matter. People inject chicken with oils and water to plump it up and make it juicy as it turns on that needle for however long they cook the chicken for.
I mean, you can just buy whole chickens and roast them in the oven yourself...its so easy to do and you can flavor it however you like...simply put, just like this:
roaster chicken (lets say 4lbs)
always rinse chicken in cold water and dry with paper towels prior to cooking
add salt and pepper in cavity
throw in a small chopped onion with skin, chopped garlic cloves with skin, cut a lemon or orange in half and throw inside cavity..throw in some fresh herbs, anything like sage, thyme, rosemary...tie the legs topgether so everything stays in place.
place in a baking pan, pour about 1-2cups chicken broth (lower sodium) or stock on the bottom of pan and a touch of white wine (this creates a flavored steam to keep the chicken moist). Rub outside of chicken with a bit of oil to coat and get the skin crispy and let the darn thing cook at 400 degress for the first 15 min, then reduce temp to 350 for an hour and 10-15 min.
You know its done when you cut through the thigh and the juices run clear.
Always let the chicken sit for 10min after taking it out of the oven so the juices move to the center and the chicken stays tender. if you cut into it right away, all the juices run out and the meat becomes dry.

Is it safe to assume the same is true for little cornish hens?

yep. You can cook them exactly the same way as I described above, but obviously a bit lower heat and less cooking time as they are just tiny chickens..;)

Perfect! I have a pair in the freezer I've wanted to cook.
Thank you very much!

There's always beer can chicken. Takes a couple hours, and is really tasty. We do that when we have people over for NASCAR races. Just my redneck 02 cents.
