chew faster
just oven roast or grill your chicken, then let it cool so you can tear it into bite-size pieces. Or, what I do is get large or whole chicken/turkey breasts, I cut them into pieces like chicken tenders size, marinate them over night (you can buy already prepared marinades like Lawry's), grill them the next day...store in ziplocs and I take with me when Im on the go.

i get a pretty short lunch break as well...off season if i eat chicken i used canned or chicken i shred myself and mix with fat free mayo and a little mustard and go to town.
Right now I'm dieting so it's plain grilled chicken and after i cook it is cut it into bite size cubes.
Chop the hell out of until it is minced..then add some olive oil mayonnaise and then some BBQ Sauce on some flaxseed wheat bread...there you have it! BBQ chicken breast sandwiches. Or you can make a stir fry with some chunks of chicken breast, almonds, broccli, with some brown rice and any sauce you like. BAM!
Cant go wrong with the BBQ chicken sandwich...I pack a couple over once in a while when I want to change it up.

oven-roast and shred (as toni said) or
cook in smaller pieces.
when i make chicken indoors (not on the grill), i usually buy boneless breasts and slice them thinly...
these small slices cook very fast in a non-stick skillet on med-high and are quick to eat too.

Exactly what I would say.
Put them in a bowl and eat with a spoon to get it done really fast.
