My dinner last night..was really good and you can also do this like a lasagna by layering corn or flour tortillas in between. You need a 2-3qt casserole dish for this recipe...some sort of a med-large pan to hold it all in and spray with pam.

1lb ground turkey (or any ground meat really)
1 5oz can diced green chilies (dont have to be spicy ones either)
1 med chopped onion
2 tsps chili powder
1/2 tsp ground cumin
1/4 tsp salt
2 minced garlic cloves, or use the bottled garlic
1-10oz can diced tomatoes seasoned with green peppers and onions, or you can use a canned enchilada sauce (not the white one, red or green is better) or you can use a mexican flavored type bottled sauce like a salsa.
2 cups kernal corn (like canned, drained or frozen. I use the mexican kind for this)
1 can fat free refried beans or a can of just pinto beans, drained
some shredded cheese, chopped tomatoes and green onions to top and your set.

first brown meat in hot pan coated with pam. Add onions, garlic, seasonings.
Then add the diced tom's or sauce of your choice. Let simmer for 5 min on low-med heat.
Carefully pour meat mix into prepared pan, top with refried beans or pinto beans, spread evenly over meat. Next top with corn, then shredded cheese.

Bake at 375 in oven for 20min..watch the cheese doesnt burn.

Let sit to cool for 10min. Top with chopped fresh tomatoes and green onions if you want, maybe some fat free or light sour cream too, then friggin chow down.

its ok, the bro thing. I been here a long while, Im used to it...LOL..but thank you ^^^^

Yes, I do a lot of cooking. I rarely ever eat out. I much prefer to utilize my kitchen and try out new recipes and create my own. Next to training, cooking and baking is my other lifelong passion with photography being third on that list.
