All right so I bought 20pounds of chicken cuz it was on sale. what are your guys' favorite recipes to spice up the ole breasts. Right now I cook my chicken, cut it up, and throw it in a pan with some cut up potatoes and mushrooms. Add a lil hot sauce and fat free ranch and your good to go.
I will be back on this...what type of chicken did you get...breasts?

Put some parsley, basil and oregano to the chicken, throw some light olive oil in the pan, turn the stove on to medium, cook both sides with the lid on, 5 minutes before it would be done, take the lid off and cook both sides until brown. No need for anything else, eat and bulk.

Ok..I am guessing the easier the better, so here are a few of mine:
Dijon-Herb Marinade
2 tbs dijon mustard
4 tsp chopped rosemary (I use fresh my dried will do..use 2tsp if dried)
1 tsp dried oregano
1 tbs water
1 1/2 tsp red-wine vinegar
1 onion, roughly chopped
2 garlic cloves, chopped
Combine all in ziploc and marinate at least 30 minutes.
cook in oven at 400 for 30+min. or grill
Chicken with parsley crumbs
3 lbs chicken
salt and pepper
1/3 c plain breadcrumbs
2 tbs chopped parsley
1 large garlic clove, chopped
2 tbs dijon mustard
1 tbs olive oil
Preheat oven to 450
sprinkle chicken with salt and pepper and bake for 30 minutes
combine bread crumbs, parsley and garlic and oil...salt and pepper
Brush chicken with the mustard and sprinkle with crumb mixture. Pat it on so it stays. Bake another 20-30 min or until chicken is done (juices run clear).
Baked chicken with potatoes, lemon and oregano
2 lemons
3-4 lbs chicken
3 potatoes cut in wedges
1 tbs olive oil
1 tsp dried oregano
2 garlic cloves chopped
salt and pepper
preheat oven to 450
squeeze juice of one lemon in a bowl and slice the other
put chicken and potatoes in large pan and sprinkle with oil (you can use pam), lemon juice, oregano, salt and pepper and garlic. Rub all over chicken. Tuck lemon slices between chicken and potatoes.
Bake for 1 hour or until chicken is browned and potatoes are tender.
I also like those Lwry's marinades and Jack Daniels marinades in the grocery store. KC Masterpiece makes a really good teriyaki marinade too.

One of the great sources of protein for us.....chicken!
This is the thread where the principal recipe ingredient is our tasty feathered friend. Post your favorite recipes and meals that mainly involve chicken and the different ways you like to cook and enjoy it.
Here's my version of probably the easiest way to cook chicken.
__
8 oz chicken breast
1 tsp olive oil
salt and pepper
garlic powder
Start by preparing your grill. Once it's ready to go, put on the chicken breast and let it grill evenly on both sides. Brush some olive oil on both sides while grilling, and season with salt and pepper if desired. I like to add a little bit of garlic powder for more flavor. Once it's ready, serve with a vegetable, complex carb, and water.

I do a couple things with chicken...one is to cube it into some rice and throw some spaghetti sauce on it...just enough to get through the rice.
Second is to split a breast in half and place it on top of scrambled egg whits on an english muffin. definitely good if you need extra protein fast. dee-lish

I take the chicken out of my GF grill, put it on my plate, put mustard on it(I never eat meat without mustard) and eat it.

I agree with ya Karmazon. Mustard on chicken makes it that much more delicious.

This is pretty basic, no measurements. go by taste.
For three chicken breasts:
1/3 to 1-2 cup Balsamic vinegar
1.5 to 2 Tbsp of Dijon mustard
1 to 2 Tbsp of honey
about 1/4 cup of olive oil
I"m not exactly sure of the measurements because I just play with the marinade until it tastes right.
Combine marinade with chicken in a ziploc bag, let sit for one hour. Grill chicken until cooked. Place over pasta with diced green bell peppers and tomato. Make a little extra marinade to put over chicken and pasta.
