View Full Version : Breakfast Tostada
This is good anytime of the day:
You can cook everything in the microwave too.
1/4 cup low-fat milk
salt
pepper
4 large egg whites
2 large eggs (for all you big boys..add more if you want)
4 (6 inch) corn tortillas
1/2 shredded cheddar (I get fat free but whatever floats your boat)
1 cup canned black beans, drained and rinsed under cold water
1/4 cup chopped green onions (scallions)
1/2 cup bottled salsa
1/4 cup fat free or light sour cream
Combine first 5 ingredients in a large microwave safe bowl. Stir until blended. Microwave at high for 3 minutes, stir, then microwave an additojnal minute or until done.
You should divide the egg mixture evenly for all 6 tortillas. Layer each serving with 2 tbs cheese, 1/4 cup beans, and then green onions. Microwave each tostada for about 30 seconds and top with salsa and sour cream.

1/2 cup chopped green bell pepper
3 garlic cloves, minced
1/4 cup canned chopped green chiles
2 tsp good chile powder
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp hot sauce
1 (14.5oz) can diced tomatoes, undrained
4 large eggs
1/4 cup Red Chile Sauce or 1/4 cup Green Chile Sauce (tomatillas)
1/4 cup shredded Monterey Jack cheese
2 tsp chopped fresh cilantro
Preheat oven to 350.
Coat tortillas lightly with pam; place on a baking sheet. Bake at 350 for 10-12 minutes or until crisp.
Heat a large nonstick skillet coated with pam over medium-high heat. Add onion, bell pepper, and garlic; saute 3 minutes. Add green chiles and next 5 ingredients (green chiles through tomatoes). Bring to a boil; cook 3 minutes or until thickened.
Heat a large nonstick skillet coated with pam over medium-low heat. Add eggs to pan; cook 3 minutes or until done.
Place 1 tortilla on each of 4 plates. Top each tortilla with 1/2 cup tomato mixture and 1 egg. Spoon 1 tbs Red Chile Sauce or Green Chile Sauce over each serving; sprinkle each serving with 1 tbs cheese and 1/2 tsp cilantro.

god i love a girl that can cook. i DVR every episode of Barefoot Contessa on the food network... the only problem is i have to subtract like a stick of butter from every receipe haha. thank god for female bodybuilding cooks :)
I absolutely love Barefoot Contessa and Giada De Laurentiis. I dont get the American foodtv station here other than the British version..Im not into the chefs here other than Nigella and Jamie Oliver.
I FIGURED I WOULD POST THIS HERE WITH THESE OTHER "BREAKFAST-BRUNCH" IDEAS. KIDS LOVE THIS TOO...WELL, IN MY EXPERIENCE IN MAKING THIS FOR WHEN MY SON HAS FRIENDS STAY OVER. IT TAKES MAYBE 15MIN TO ASSEMBLE AND CAN BE MADE AHEAD OF TIME AND CHILLED TILL READY TO BAKE OFF.
3 tbs butter, softened
1 (16oz) French bread loaf, cut into 24 (1/2-inch) slices
pam
1 (12oz) jar orange marmalade (low sugar works too)
2 3/4 cups 1% low-fat milk
1/3 cup sugar
1 tsp vanilla extract
1/4 tsp ground nutmeg
6 large eggs
1/3 cup finely chopped walnuts (optional)...pecans work too
Spread softened butter on one side of each bread slice. Arrange 12 bread slices, buttered side down, slightly overlapping in a single layer in a 13 x 9-inch baking dish coated with pam. Spread marmalade evenly over bread; top with remaining 12 bread slices, buttered side up. Combine milk and next 4 ingredients (through eggs), stirring with a whisk. Pour egg mixture over bread. Cover and refrigerate 8 hours or overnight. This is so the bread absorbs all that custard like goodness you added on top of it.
Preheat oven to 350.
Sprinkle casserole with walnuts. Bake at 350 for 40-45 minutes or until golden. Let stand 5 minutes before serving.

haha..yea..nobody will ever starve if Im around. These recipes are very simple..maybe a little time consuming but easy and worth the little prep work it takes to prepare. I cant even post any other recipes now without drooling on my keyboard!

1 1/4 cups chopped green onions
1 cup chopped lean ham
2 minced garlic cloves
7 hawaiian rolls, cut into cubes (sweet bread)
1 3/4 cup fat free or low fat milk
3/4-1 cup egg beaters
2 tbs dijon mustard
salt and pepper to taste
pinch ground nutmeg
3/4-1 cup shredded swiss cheese, divided
Heat a non stick skillet over med high heat and coat generously with pam. Add onions, ham, garlic and saute 5 min. Remove from heat and set aside. Preheat oven to 350 degrees F.
Arrange bread cubes on a baking sheet and bake for 15min till toasty..you may need to turn them once during the baking time.
Combine milk through nutmeg in a bowl. Stir in ham mix. Add bread and gently toss together.
Arrange half the bread mix into a 8-inch square baking pan coated with pam. Sprinkle with half cheese then top with remaining ham mix. Bake 25 min, then top with remaining cheese. Bake an additional 20 min until browned and bubbly on top and eggs are set.
Makes 4 servings:
350cal, 12g fat, 25g protein, 36g carbs
