You can buy frozen mussels.
1 1/2 tsp olive oil or spray tall pot with pam.
8 garlic cloves, sliced
1 1/2 water or fat free chicken broth
3/4 dry white wine
4 lbs. small mussels (cleaned) (can use large)
1/4 tsp pepper
1/2 c chopped cilantro pr parsley
Heat oil/pam over med. high heat and add garlic. saute 3 minutes.
Add water and wine and bring to boil. Add mussels and cover. Cook over med high heat for 6 minutes.
Discard any unopened shells!
Sprinkle with parsley and serve!
Makes 4 normal servings (about 24 mussels each)
