Since mussels seem to be big here:

1 tbs olive oil or pam
2 cups chopped onion
6 garlic cloves, minced (can be bottled)
4 cups chopped tomato (fresh is best)
1 cup dry white wine
2/3 c chopped parsley
1/4 c chopped basil (fresh again is best)
salt and pepper to taste
crushed red pepper to taste
2 bay leaves (dried is fine)
5 lbs mussels, cleaned (can be frozen)
linguine/cooked

Heat oil or spray pot with pam (you need a deep/tall pot for all these mussels)
Med-high heat...add onion and garlic and saute 3 min. Add tomatoe and next 7 ingredients; cook 10 minutes.

Add mussels and cover for 5 minutes longer. Discard bay leaves and any unopened shells.

Serve with pasta with some sauce in pot with mussels.
Add parmesan cheese if you want.

Makes 5 normal servings (24 small mussels, 1 cup cooked pasta, 1 cup sauce)

394 cal, 23g protein, 60g carb, 815mg sodium, 6.8g fat (less if you omit the olive oil)
