CHICKEN MANGO WRAP

1 cup diced tomato
1 cup diced mango (1 medium)
1/4 cup diced red bell pepper
1/4 cup diced red onion
1/4 cup chopped cilantro (optional)
3 tbs fresh lime juice
1 tbs minced, seeded jalapeno pepper (can be bottled)
salt and pepper to taste
8 (7-inch) tortillas (whole wheat, fat free??)
3 cups cooked chicken cut in pieces
1/2 cup low-fat sour cream (light, fat free, whatever)
lettuce (optional)

Combine first 9 ingredients in bowl. Let stand 30 minutes so flavors mesh together.

Warm tortillas.

Combine chicken, salt and pepper. Spread some sour cream on each tortilla. divide chicken evenly and top with mango mixture. Add lettuce if you like.

Makes 8 tortillas
245 cal, 3.9g fat (could be less, depending on type of sour cream you use and how much chicken you put in one tortilla), 20g protein, 32g carb (depends on tortillas too), 573mg sodium.

Good! Go to the grocery store and make this for lunch. I am trying to give you guys some new and fresh meal ideas. It seems most of you just eat the same stuff and don't realize there is more out there. I am trying to make the prep work as easy as possible along with being wallet-friendly.

1 tsp olive oil...or pam
1 1/2 cups sliced onion (red is nicer)
1 1/2 cups sliced green bell peppers
salt and pepper to taste
4 slices bread or rolls (requested by Punisher!)
8oz thinly sliced roast beef
4 slices reduced-fat or fat-free swiss cheese

Heat pan with oil or pam over med. heat. Add onion and cook 10 minutes, stirring frequently. Add peppers, salt and pepper and cook 3 minutes longer or until peppers are crisp-tender.

Preheat broiler in oven (or toaster over, whatver you use).
Coat top sides of bread with pam. Top each slice of bread with roastbeef, pepper mixture and cheese. Place sandwiches under boiler until cheese melts...watch you dont burn your sandwiches!

2 cups diced red potato
1 tbs margarine (reduced fat if you can find it), or pam
1/3 cup sliced green onions (scallions)
1 tsp dried basil (fresh is always better)
salt and pepper
1 garlic clove, minced (or 1 tsp bottled)
2 (8oz cartons) egg beaters...you can use the equivalent of eggs or whites
3/4 cup (3oz) shredded reduced fat cheddar cheese

Ok...a few steps here, not rocket science or anything. Place potato in pan and add water to just cover the potatoes. Bring to a boil. Cover, reduce heat and simmer 20 minutes or until tender, then drain.

Melt margarine or spray pan with pam in a non-stick skillet preferably, over med-high heat. Add pot, onions, and next 4 ingredients, then saute for 2 minutes.

Pour eggs over potato mixture, reduce heat to med-low and cook uncovered, 8-10 minutes or until almost set...watch it!

preheat broiler in oven.

wrap the handle of the skillet with foil and broil 3 minutes. Sprinkle with cheese and broil about 30 seconds, till cheese melts. Should make 4 normal servings.

193 cal, 5.9g fat (depending if you use margarine or not and if you use whole eggs or eggbeaters), 19g protein, 15g carb.

I could send the brownies you know...I use USPS mail here and the brownies will hold up in the cold weather. If they get a bit frozen, you just microwave them for a few. Let me know..I will send you a batch. I send my baked goods to all my friends and family for holidays and birthdays and such. I won't poison you..trust me. That would be insulting to my recipe...and you of course..LOL

4 oz small elbow pasta, uncoked
pam
1 lb ground turkey breast (dark meat will be higher fat..right)
1 (14.5oz can) no-salt added diced tomatos, undrained
1 (8 3/4oz can) no-salt added whole kernal corn, undrained
1 packet less sodium taco seasoning mix

Cook pasta. While pasta cooks, spray pan with pam over med. high heat. Add turkey until begins to brown and crumble. Stir i drained pasta, tomatos, corn and taco seasoning. Cook 5 minutes, keep stirring.

makes 4 normal servings

330 cal, 3g fat, 32g protein, 42g carb

ya know what i like Toni, I like some shrimp and spahgetti
you seem like you know what to do when it comes to cooking

ya know any good recipes? i LOVE spicy foods too, im just not that good of a cook, kinda tired of chicken, steak, brown rice, and oatmeal. oh, and eggs, i just hate em, lol, my family thinks I LOVE em.

Just for you bobbyj654..this is really easy and feel free to serve with rice. i know your sick of rice..just putting it out there.

8oz fettuccine, uncooked
olive oil flavored cooking spray
2 tsp olive oil
2 tsp. blackening seasoning (spicy/zesty..you will find in the spice sections at grocery)
3/4 lb (or more if you want), large shrimp. Now fresh is always best, but frozen is fine. You can use the pre-cooked type but that means you have to be careful not to over cook the shrimp. Defrost the frozen shrimp by running under cold water first before preparing this meal.

2 tbs. fresh lemon juice
1 (14.5oz can) diced tomates with roasted garlic, drained (you can buy the zesty flavored one too if you want).
salt and pepper
red pepper flakes, optional

Cook pasta. While pasta cooks, coat a large nonstick pan with cooking spray and oil. Place over med-high heat until hot. Sprinkle blankening seasoning on shrimp..add to taste, so more or less if you like..dont overdo it though.
Add shrimp to skillet and cook 2 minutes or until shrimp turn pink (if they are not pre-cooked). Stir in lemon juice. Add tomotoes, salt and pepper and cook until heated through.

Do not overcook your shrimp..they will become rubbery!
Spoon over pasta and serve with reduced fat parmesan cheese and chopped fresh basil.

4 normal servings

344 cal, 5g fat, 25g protein, 48g carbs

For those of us that know your a girl Toni, at least myself anyway. I find some of the things that are said in response to some of your post to be pretty funny because they don't know they are responding to a women. I just laugh and say to myself........If they only knew. ; )

I am glad you liked it it. Just tell me what you guys have in your fridge or what you would like to eat and I can post something here for you. Otherwise, I will just keep posting and I can go crazy when it comes to making meals! Its what I love next to lifting! Cooking and Baking! Just let me know what you guys want.

Plus, I think this is a good thing to get those of you who normally don't cook, other than what you have been preparing, to become familiar with the kitchen. The ladies love men who can cook you know!

I have other posts in this section too, so check them all out. There is the basic burger, the breakfast (well, anytime really), tostada, mussels, tuna meals, few others. They are not expensive to make either. You may have to browse around the fresh veggie sections and grab some fresh herbs. However, it is well worth it when it comes to taste and quality of the meals you prepare.
