View Full Version : The Best Fish
You can use cod, mahi mahi, halibut, swordfish...any whitefish pretty much with this easy recipe.
4 (6oz) fillets (frozen fish is fine, like coleman's..just defrost prior to cooking)
Pam (olive oil flavored is nice)
1 tbs lemon juice (fresh)
2 tsp fresh dill but dried is fine too
1 cup chopped tomato
1/2 cup sliced green onions
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
(of you want some spice, through in a small jalapeno or harbarnero pepper, chopped...dont touch the hot pepper than your eyes! I learned that the hard way)
salt and pepper to taste
1/2 cup shredded cheese (any white cheese..mild, like gouda, swiss, jarlsberg..reduced fat is best)
1/2 cup dry white wine
Ok...preheat oven to 425.
Place fish in a pam coated 13x9 inch baking dish (with high sides)...Drizzle fish with lemon juice..use more lemon if you want to. Not the whole lemon though. Sprinkle with dill. Top with tomato and rest of ingredients, except cheese. pour wine into bottom of dish. This is what will steam the fish during cooking. Cover with foil and bake at 425 for 20 or so minutes..depends on your oven. The fish should flake easily with a fork.
Sprinkle with cheese and serve over rice....
This nutritional content is based off halibut and without the rice:
300 cal for 1 fillet and 1/2 cup veggies with juice
9g fat (fat will vary depending on the fish used)
41g protein
8g carb

I have read what you guys eat and attempt to eat..even some of the pros...blending steak and who knows what in their darn blender..Oh my GOD!
Then again, they eat a whole lot more than I do..then most of us do, so they have to use all resources I guess...hahaha.
I am thinking about opeing a food establishment catering only to bodybuilders. I would like to do this in NY. My husband won't back me...he thinks I am stupid...that my idea is stupid. Well, one day..I will prove him wrong. One day.....

I'll be sure to order some stuff from that company Toni, because I'm sure it will be better than those few times that i've downed tuna, eggs, and milk from the blender. Thank god for my steel taste buds, because if I know what I'm eating (or attempting to drink) is good for me, I can easily look past taste.

You can use this on any fish really
4 scallions
1/4 cup chopped cilantro (optional)
1 tbs minced ginger (bottled ok)
2 tsp sesame oil, divided
4 (6oz fillets)
2 tsp rice vinegar
2 tsp low sodium soy sauce
salt and pepper
4 lemon slices
Slice onions into small pieces..about 1/4 cup full.
Combine all ingredients and whisk together. Spread a bit of dressing on bottom of baking dish with fillets on top. Add rest of dressing over fillets. Cover with foil. Bake at 425 for about 18-20 minutes..it will depend on the type of fish used and how thick it is. The thinner the fillet, obviously watch the cookig time. The fish is done when you use a fork and scrape the top and it has a flaky texture.
Serve over brown/white rice with warm dressing.
approx 188 cal, 4.5g fat, 33g protein, 3g carb...fat and protein all depends on the fish you use too.

So glad you liked it. I made the Asian one tonight for dinner. It was really nice. Make sure you dont overcook the fish...and try to use fish without skin.

1 1/2 tbs honey
1 1/2 tbs dijon mustard
1 tbs balsamic vinegar (the better the vinegar, the better taste you will have in the end product)
pepper
1/4 tsp garlic salt
1-6oz salmon steaks (about 1/2 in thick)
combine first 5 ingredients together and brush over fish.
Coat grill rack with pam (use a george foreman grill if you like) and place on grill over med-hot coals. (sorry, dont like gas grills at all)
Place fish on grill, covered, 2-3 min each side or until fish flakes easily with a fork.
serve over rice or couscous
2 servings
356 cal, 11g fat (depending on type of salmon), 24g protein, 14g carb
Thanks for all the great recipes Toni. You have me drooling already. I have been searching about for some good recipes. As I have gotten older and gotten injured I have found it harder to loose some of the fat I picked up while in recovery.

Ok, I dont even have to look this one up:
Butter flavored pam
2/3 cup corn flake crumbs (take corn flakes and put in ziploc and crumble them up, but not too fine, you want texture)
1/4 tsp ground red pepper (optional)
1/4 tsp garlic salt
4 (4oz) catfish fillets
2 egg whites, beaten
Line a shallow pan with foil and coat with pam. Combine crumbs with spices in small bowl. Keep in mind, this is really simple and basic..you can play around with spices as you like and make this even more tasty).
Eggs in another bowl. Dip fillet into eggs and then dredge in crumbs. Lay flat on tray and season with salt and pepper.
Bake at 450 for 8-10 minutes or until fish is flaky when forked..;)
4 servings (1 fillet ea)
approx:
224 cal, 5g fat, 24g prot, 19g carb.
Serve with Zesty fat free Coleslaw:
Buy already prepared coleslaw (in bags at grocery), and mix with fat free mayo and 1/3 cup fat-free vinaigrette of your choice.

The catfish and the breading is pretty plain..adding red pepper will give it a nice zing..you can add whatever dry spices you like to it. Don't go too crazy or you will taste too much spice. Just a sprinkle or 1/4 tsp of your spice choice is fine. If you wanna replace the garlic salt that is fine too. You dont even have to add more salt to it if you dont want to. The garlic salt is plenty for me..but some people like to add more..its up to you...just dont go too crazy. Its meant to be a simple tasting dish.
The cole slaw is super easy and you can add jalapenos or corn to it. However you like your coleslaw, make it your own!
can you make salmon in the foreman, i hate using stoves...
You can cook any meats on that thing..its really good. Just make sure you clean it well..or the next food you cook will taste and smell like fish! yuck!
If your salmon is really thick, you will have to keep an eye on it unless you have the one where you can set the heat levels. If your salmon is about an inch thick, you need about 5 minutes per side.
