View Full Version : Pork, Lime and Peanut Salad

This requires a bit more prep work and a day to marinate, but worth the wait. its important to use fresh ingredients too:

1 3/4 lb pork tenderloin, sliced thinly
1/4 cup fresh lime juice
1 1/2 inch piece fresh ginger, grated or minced
2 tbs water
4 scallions, sliced thin
1/4 cup roasted, unsalted peanuts

Sweet Chili Dressing:
1 tbs fish sauce (yes...in asian section at grocery)
1 tbs chili sauce (sweet or hot, up to you..must be the asian stuff)
2 tbs fesh lime juice
1 hot red pepper, chopped fine
Various lettuce leaves
shredded carrot (optional)
shredded basil and cilantro leaves (optional)

place pork in large bowl with juice and ginger, toss to coat and cover and chill 3 hrs or overnight.

Make chili dressing.

Stir fry pork in batches in lightly oiled or pam coated nonstick skillet over med-high heat. Make sure meat is cooked through. Cover to keep warm.
Place pork over salad leaves with scallions and fresh herbs if you use them.
Toss with dressing (shake or whisk dressing together first), and sprinkle with nuts.

serves 4 normal servings.
about 7g carbs, 10g fat, 320cal, 49g protein...I am rounding off here.
