Here's my fav chicken recipe which is basically, low fat shake n bake.
Recipe:
1½ C. Low Carb Breadcrumbs
1½ Tbsp. Fresh Parsley Minced
1 Tbsp. Fresh Oregano Minced
1 Tbsp. Fresh Basil Chopped
Salt and Pepper To Taste
3 Egg Whites
1 Tsp. Lemon Juice
6 Chicken Breast Halves
Directions:
Preheat oven to 450 degrees. Mix together first six ingredients in a large zip loc bag. Seal the bag and shake the ingredients well. Combine the egg whites and lemon juice. Brush this mixture over the chicken breasts. Place the coated chicken into the bag, seal, and shake until the chicken is thoroughly coated.
Place the chicken on a baking sheet that has been sprayed with non stick cooking spray, sprinkle the remaining breadcrumb mixture over the chicken. Bake for 25 - 35 minutes or until the chicken is done.
Servings: 6 chicken breasts
Chicken and pork are easy for me to get down, a little hotsauce and I'm set. Same with eggs. Oatmeal...splenda does the trick.
The one I have the hardest time with is tuna and brown rice. But I've been mixing about 300cal worth rice (forget how many cups :p) and a 7oz packet of tuna and dashing on some Tony Sacharies Creole Seasoning. Try it, shit is delicious. Makes eating tuna actually something I look forward to.
What I am doing now since I am 12 weeks out from my show and my salt intake is still high, I'm taking either chicken or beef depending on what meal it is and I'm cooking it with soy and worchestershire sauce and onions. It adds a lot of flavor and makes it so even if i wasnt dieting I would still like to eat it. I'm cooking the chicken with broccoli and the beef with green peppers and it tastes great.
For oats I'm just adding equal and cinnamon and some water and eating them raw like a bowl of cereal. For 2 of my meals I have protein powder and oats so all I'm doing there is putting the pro powder in the oats with some cinnamon and a little water to make it cake together and eating it raw. I use vanilla powder so it takes on the cinnamon flavor and it is pretty good.
My Best Roasted Chicken Recipie
--------------------------------------------------------------------------------
You can try this...comes out perfect every time and its fast and easy enough for you busy bodybuilders!
Large roasting chicken (oven at 400 degrees)
stuff cavity with lemon slices, whole garlic (with skin), small onion cut in half (with skin), fresh rosemary, thyme or sage (or all three), and stuff inside and under skin. You can chop an apple in half too and put it inside if you like.
You can either take a small amount of canola oil and rub in your hands (like a tsp or less) and rub all over outside of chicken or spray pam in your hands and rub all over outside of chicken. Season with salt and pepper, place in a roasting pan with high edges.
Take a can of fat free/low sodium chicken broth and pour half can in bottom of pan. Put chicken in oven and roast at 400 degrees for 20 minutes than turn down heat to 350 and roast an hour more for a large chicken. You may need to add more chicken broth in pan..so do so..you can add some white wine too.
Cut into thigh to make sure your done otherwise put in oven for another 10 or so minutes...there is your dinner! Moist and delicious every time! I promise!

I might have to try that PB one, I have been using the recs here with the protein shake, and have been pleased thus far.
Also, for chicken, if you have a foreman grill it is real simple to make a solid meal where the chicken actually tastes good.
get some low sugar bbq sauce, mix a sizeable amount in a bowl with salt, pepper, and a little mustard. make it a paste. Put it in a ziploc bag with the chicken over night to marinate. The chicken will soak it all in. Either use a foreman or a regular propane grill the next day and off you go. A nice tnagy taste and good for you too

Here is an easy one, that tastes damn good...
Bag of minute rice
12 oz. of cooked, diced chicken breast
1 can Fat Free Cream of Mushroom soup
1 can Fat Free Cream of Chicken soup
Mix in a pot and cook slowly on the range or bake in a casserole dish... Lots of carbs, kcals and protein in a tasty slop. Season with cayenne if you like it spicy. Peace, G

Thank you for this one! Eating it right now!
The Peanut butter gives a little more protien but I also have read that two tablespoons of honey has more energy in it than a Redbull.

My wife will sometimes make this appetizer like meal before I eat my chicken and brown rice.
You will need the following:
1 Tomato
Feta Cheese
Baslamic Vinegar
Sweet Basil, or Basil
Take the tomato and slice it into thin strips. Arrange them seperately onto the plate and put about a capful of Basalmic Vinegar on each individual slice (Alot of it ends up draining off) Sprinkle each slice with a healthy dose of Basil now. After this - add a couple crumples of feta cheese to each slice. Enjoy.
I've eaten this cutting and bulking. Fantastic appetizer like thing.

2 cups non fat plain yogurt
sliced strawberries ( i buy the frozen sliced ones without sugar)
handful of blueberries
top with granola
quick to make, good, fast. you can do a tradeoff with the fruit (like strawberries and bananas)
tried a unique on last night,
Can of Albacore tuna
6 egg whites
Taco seasoning pack
1 roasted red pepper
basicly, chopped up the pepper, mixed it with the tuna, egg whites, and taco seasoning. Put the mixture in a skillet with olive oil, and cooked until the eggs were cooked. Place over a bed of Romaine, douse with Frank's and dig in
it actually tased good!
hey guys, new here and thought i would drop this one for those who are tired of eating egg whites and tired of eating oatmeal plain. depending on how you dress it up you can use it for dieting or bulking.
1 cup egg whites
1 cup quaker oats
tbsp splenda
dash of cinnamon
mix it up and let it sit in the fridge for about 20 minutes so it can thicken up. Pour into a frying pan, of course using pam. Add a 1/2 cup of blueberries, mixed berries and cook like a pancake. You can eat it plain or add the no sugar syrup.
I live off these things.

Dude, This thread makes me think ANIMALPAK.COM should come out with a new product: the ANIMAL cookbook. How sweet would that be? A chapter for carbs, one for protein, one for cutting and one for bulking. I think anyone serious into the diet would love that. Anyway, here's my dessert addiition.
Oatmeal protein cookies
1 1/2 cups oatmeal
some splenda
4 scoops of muscle milk, any flavor(they all rock)
1/4 cup raisins or other dried fruit
1/4 cup milk
Mix all that good stuff together, if it looks to thick and won't mix add some more milk. Set your oven to 350 degrees, plop some tablespoons on a cookie sheet and cook around 10 mins or until they look done. Sometimes they come out dry, I'm still experimenting with the recipe. I basically took it out of the lid on a quaker oatmeal container, replaced the flour with muscle milk, and made a few alterations. Give it a try if you're bulking everyone loves cookies, and cookies with GOOD carbs and delicious protein can't fail.

I'm still hooked on House's oatmeal cookies...1 cup oats, 1/2cup water, 6-8 splenda packets...mix together and put into the microwave for 3 1/2-4min...so quick and easy to add to eggs for breakfast in the morning
The Start:
Add a teaspoon of butter spread to a non-stick pan
Saute 1/2 cup green onions cut into strips
1/2 cup chopped onions
4-6 ounces of turkey chopped,
Then add 1 cup of egg whites and two wholes eggs. Remove the peppers, onions, and turkey from the pan. Add a teaspoon of butter spread the eggs whipped into the pan. After the bottom gets done flip over the omelet and add a 1/4 cup of low-fat cheese to one side of the omelet and the green peppers, onions, and turkey to the other side, fold the omelet in half cook evenly on each side and your done.

I will not have recipes such as this competing with mine on here! JUST KIDDING! I love a man who knows his way around the kitchen! By the way, I am eating my 3rd piece right now...so yummy! I love you..thank you!
I omitted the eggs, I have a thing about eating raw eggs, so I substituted with something else. Still delicious..and I love sticky, like rice krispie treat sticky and chewy.

How to make that can of tuna more palateable?...Try mixing in LOWFAT
Italian Salad Dressing..Sounds Gross...but sure makes the tuna go down a
whole lot easier.
haha toni's gettin defensive over HER cookbook. but what'd ya substitute for the eggs?
I believe he was using the eggs to keep everything together, like a glue, then once it cooled, it all kept together so you could slice it. I am guessing here. I think it would have been fine if you baked it for 10 minutes than cooled it. Its all personal taste really. If the eggs are fresh, it should not be a problem to eat raw eggwhites. I just wouldn't keep it for too long.
I put peanut butter and about 1/4 cup honey in the microwave to heat up, then stirred together to make a paste, then added the skim milk, but not as much. I lined a baking tin with foil and sprayed it with pam.
I mixed the oats with vanilla protein powder and the cinnamon. I poured the liquid over the oats and mixed together. I baked it for 10 minutes at 350 degrees. Than let it cool. It was really good. You can actually do alot with this recipe to make it your own. You can add anythng to it.

Some of this stuff sounds too good to be true. Compared to some of these recipes, the way I cook is too simple. The farthest I've ever gone with a recipe was redhot marinated chicken.
I personally really want to try to suggested French Toast.

3/4 of a can of tuna (or all that'll fit) on toasted whole wheat with either one or two slices of cheese. Throw it in the microwave just lonng enough to melt the cheese and eat whats left straight outa the can or save it, whatever. Just make sure to drain the can really well before hand or your bread will get soggy.

3 bananas well mashed,
In a bowl shirt together -
1 1/2 C. of Flour
1 1/2 tsp. of Baking Powder
1/4 tsp. of Baking Soda
1 scoop of protein (Vanilla or Chocolate)
a dash of salt
In a large mixing bowl -
3 eggs whites
the mashed bananas
3/4 C. of Equal or sweetener
3 tsp. of Cooking Oil
Stir together then mixes the bowl of dry ingrediants in, and mix until batter forms. Add in 1/2 C. of Alomonds (not neccisaery if you don't want em') and mix together. Pour in regtangular baking pan.
Pre heat oven to 350 and bake for 45-50 mins.
Taste Great and it's got all the bad shit cut out from normal banana bread.
Enjoy.
i was jonzing for something sweet today so i made up a baked apple idea. cut apple in half, cut out the core, scoop out the inners in a bowl, add crushed walnuts, small amount of vanilla protien powder and brown sugar splenda, mashed all those together then scoop them back into your apple skin, throw some more brown sugar on the top and bake at 350. the brown sugar carmalizes on the top. fuck that was good. try it you might like it. you could also add cinnamon or nutmeg i will probebly do it the next time around!
I made this a couple nights ago..
I don't measure things out most of the time I cook.. I just go especially on new recipes.. so all of the measurements are approximate -
Combine in a saucepan set to low heat -
1/2 cup of milk
1/4 cup powdered baking cocoa (non sweetened)
8 packets of splenda (more if you like it sweeter - I like semi sweet chocolate)
1 tbsp cinnamon
Stir constinuously until the cocoa powder begins to mix in and mixture becomes even
Now here's the grey area..
I grabbed the natural peanut butter and heaped out what I believe to be the equivalent to about 3-4 tbsp's
I turned up the heat another notch and stirred in the pb..
The mixture should thicken up and become fudge like.
Put this in a bowl.. container w/e you prefer and let it cool in the fridge for about an hour.
Give me your feedback!

I'll have to say that after lifting, cooking is my passion. I love food, feeding people and will someday own my own restaurant.
Tonight before class, I sauteed a little ginger, onion, and green pepper, all finely minced in a slight dash of olive oil. I enjoy using my wok for this. Than i'll add in 2 or 3 cans of tuna... let it come together for a few seconds, than about a cup of diced tomato and marinara sauce. I like trader joe's for this... its got maybe 3 ingrediants. Let the sauce reduce for a few minutes than serve over rice... Its delicious and fast.
I think tuna is great, fresh or canned. I work at a restaurant and my family owns a seafood business... so access to fresh fish and chicken by the ton is not a problem. The problem is balancing school, work, and lifting.
Anyways, tuna can be improved with any number of ingrediants. One I particularly like is an asian tuna salad.
In a large bowl mix together canned tuna, diced red onion, chopped cabbage, chopped cilantro, chopped scallions, chopped pear or apple if so desired for a little sweetness. On top pour a mixture of Sambal bak(chili paste) or siracha(same) low sodium soy sauce, lime or lemon juice and a table spoon of olive oil. Mix and enjoy.
If anyone would like a recipe for a specific thing please PM me. I'll be very pleased to help.

What i do all the time is make burritos... i dont get why everyone out there doesnt do this. they are probably the best tasting thing ever to enter my mouth and they are amazing for you.
what you need:
+Chicken/Steak
+Onion
+Cheese
+Chipotle Taco Seasoning Packet
+2-4 Garlic Cloves
+1 Small Avocado
+Fresh Cilantro
+Rice if wanted (I usually dont except post workout).
+Chalua Hot Sauce
what i do is fire up a pan with olive oil and garlic in it then add chicken, steak, and onions cut up in smaller pieces when the pan is hot. let that shit cook and when its near done throw on a 1/3 of a packet of chipotle taco seasoning. for the burrito throw on some cheese on the bottom (to get it melted), avocado, tons of cilantro, and rice (white/brown/or none depending on when you have it). then cover all this with Chaula hot sauce and i guarentee you will fucking love it.
i basically live off of these and got in ridiculous shape by adding this to my meal arsenal. i highly recommend you guys give this a try. its so fucking easy to make and you can save the chicken/burrito mix in the fridge to snack on whenever.

this is a great meal. i do this alot except i trade out the feta cheese for fresh mozzerella cut in circular pieces and fresh basil instead of the shaking kind. to me it tastes much more fresh. also try this on a fancy whole wheat cracker... so fucking good.
this stuff is the best! just get some chicken breast, a little bit of olive oil, a shit load of pepper, and some garlic salt. Put it in a pan and cook it. have it with some rice and vege's and your set
Hey everyone, can somebody pls show me a simple way to cook a palatable dish of chicken breast wid brown rice ? I saw a video posted by g diesel b4 but I dun remember whr is it, thanx guys
mashed sweet potatoes.
i slice them across the width, making 1 to 2 inch thick medallions, fill up a large pot (make enough for a few meals)
add a couple tbsp's olive oil, sprinkle in a couple tsp's cinnamon
fill pot with enough water to just cover the top of the potatoe slices.
DO NOT BOIL
put on medium heat until potatoes are soft.
(sometimes i will brown 2 lbs of 96/4 lean ground beef and mix with potatoes)
brown rice and beans
boiled brown rice (4 cups dry)
2.5 lbs browned 96/4 (or better) ground beef
browned with olive oil and whatever seasonings you want
1 large can black beans
1 large can kidney beans
topped off diced tomatoes

This is my favorite thing to eat. I take a big can of already cooked chicken, heat it up. Put on whole wheat tortilla (the big ones) garnish with low fat shredded cheese and green salsa (my favorite salsa, got the right amount of kick), if you want more carbs, add 1/4 to 1/2 cup of brown rice, make your own grilled stuffed burrito! good post workout meal!

Two quick and easy recipes:
Chicken Pittas
100g of ready cooked chicken breast
2 handfulls of grated cheese (I use cheddar)
2 pitta breads
Sprinkle pittas with a little water, and microwave for 2 mins (based on 800w), they should puff up, once they have done so take them out and slice open fill each one with 50g chicken and a handful of grated cheese, microwave again for 2 and a half mins.
Enjoy!
Sweet and sour chicken
100g ready cooked chicken breast
1/2 a jar (250g) sweet and sour sauce
1 cup cooked brown rice.
pour sauce over chicken and microwave in a tupperware container for 3 mins, stir and mix rice in with sweet and sour chicken and pop back into microwave for another 2-3 mins. stir and eat.
Two quick and easy meals, you can make the pittas in advance , you dont have to microwave them a 2nd time, and though they are a bit tough to chew when they are cold I think they seem like a good alternative to a sandwich.

I found this somewhere but I can't remember where. Its really simplistic though and actually tastes good.
1/3 cup oatmeal (uncooked)
1/3 cup egg beater
1/3 cup low fat cottage cheese
blend it all together and pour it on the griddle. Add anything else for flavor, I like to add ground cinnamon personally.
I've been doing this one for a while because it's so easy and cheap. I wouldn't use it to cut but it's not bad at all. I start with a few pounds of ground beef(or turkey), chop it up and put it in a pan to cook. Throw in a couple of chopped onions and cloves of garlic, a few potatos, and a lot of bbq sauce and you've got a good meal. I throw in a few hot peppers for spice too. When I make it I usually have about 4 to 5 servings so I can have it for a day or 2. I don't know the exact nutrition facts, but if you don't want the sugar get rid of the bbq sauce and use hot sauce, use less potatos for less carbs, use turkey instead of beef for less fat, you get the picture.

Great tasting, very healthy.
1 Whole Wheat Bun- 240 cals(42g carbs)
1 Turkey Bacon slice- 35 cals(6g protein)
1 Fat Free Cheese Slices- 40 cals(3g protein)
2 Lettuce Slices- I don't know calories
7oz Lean Meat Patty-350cals(40g protein)
Total: 665 Calories(50g protein)
Grill the meat patty & turkey bacon together. Heat up the bun, and then put the patties & bacon in together(sometimes I chop the bacon up and make it into pieces) and you can melt the cheese on top, sometimes I do sometimes I don't. Taste great. And I take it to school a lot.
Here are a couple of my favorites....better for cutting/pre-contest
**Salmon w/cottage cheese:
3 oz packet Salmon
1/2 c. Lowfat/FF Cottage Cheese
MIx together with some dill parsley... 180 cal, 4 fat, 4 carb, 0 fiber, 28 protein
**Tuna "Pizza"
Wheat wrap (I use a brand called "Flat Out" Wraps...decent protein)
6 oz. can of tuna, drained
1 Tbs FF Sour Cream
Dill Relish (Hienz 57 makes an awesome one)
2 Slices FF Cheese
Mix tuna, sour cream, and relish. Spread over wrap. Tear cheese into strips and put on tuna. Mirowave for about 45 seconds. REALLY good baked though, 400 degrees for about 8-9 minutes..... 310 cal, 3.75 fat, 21 carb, 8 fiber, 44 protein
**Just a yummy treat, microwave 2 Dove Dark Chocolate with 1-2 Tbs. sugar-free jelly (. MMM...hot fudge
Here is a cake recipe to share....
1 pkg cake mix (your choice)
1 pkg either jell-o or pudding to compliment cake (SF/FF)
1 c. water
4 egg whites
3/4 c. light or ff miracle whip (Sound really disgusting, but it turns out sooo good!)
Mix cake mix with water. Add rest of ingredients, mixing after each added in. Bake in a 9"x13" cake pan @ 350 degrees for about 30-35 min. This cake is so moist, I've brought places and nobody believes it is relatively healthy. (Cut into 24 squares, each piece works out to about 100 cal, 2 fat, 19 carb, 0 fiber, 2 protein.)
Hey everyone, can somebody pls show me a simple way to cook a palatable dish of chicken breast wid brown rice ? I saw a video posted by g diesel b4 but I dun remember whr is it, thanx guys
I butterfly (slice through the middle sideways, so it opens like a book) a chicken breast, then add some garlic powder, steakhouse pepper, rosemary and a little cayenne. Season both sides then throw it on a George Foreman grill (or under a regular grill).
As for rice, mix some ketchup, worcestershire sauce, vinegar and lemon juice in a pan on a low-med heat. It should be like a thick gravy after a few minutes. Then just throw in your rice and some diced peppers and onion. I have my girlfriend to thank for that one!

1 part Salsa
2 parts LF/FF Cottage Cheese
Eat with Tortilla Chips or other spoon-type edible device. Tastes great and easy to make.
Lazy Man's Chili
--------------------------------------------------------------------------------
Meat ( beef turkery, w/e you want ) brown in a pan
Brown Rice or Beans
pack of chili seasoning
hot sauce
after browning meat and cooking rice or beans toss all ingredients into a large bowl.
veggies are optional
-----------------------------------------------
Actually, I do a lazy man's chili, much lazier than the above. I just do ground turkey with a can of kidney beans. Drain the juice and when I am ready to eat it I add ketchup or mustard to it after I heat it back up.
From MD, so love crab cakes and ol bay!
So I drain a large can of tuna, 1/4 onion, some celery, couple of hard boiled egg whites.
Tbls. of mayo dash the old bay seasoning on top, throw it in some whole wheat pitas.
Good protein.
Or you could DO THE HOOK UP!
TUNA, OLD BAY, MAYO, TOSS THAT IN A BOWL OF RAMEN NOODLES.
Been working for inmates for years.

this is a great meal. i do this alot except i trade out the feta cheese for fresh mozzerella cut in circular pieces and fresh basil instead of the shaking kind. to me it tastes much more fresh. also try this on a fancy whole wheat cracker... so fucking good.
feta and mozzerella together is so good with a bit of butt rub.
This is how i do it. I cook by sight, so some of the measurements are my best estimates...
-2# ground turkey, or 1 turkey and 1 beef
-4 slices of yer favorite bread
-1 cup milk
-1 cup yer favorite salsa
-7 to 10 sweet banana peppers or peppercini, sliced
-1 cup bread crumbs
-2 eggs
-cayenne pepper, if you can handle it
-yer favorite BBQ sauce
-pre-heat oven to 350 degrees and spray a 11x7 pan
-in a mixing bowl, tear up the bread and pour the milk over it. let soak for 5 min. to soften.
-EXCEPT for the BBQ sauce, add all the other ingredients to the bowl. get yer hands in there and mix it up.
-put it in the pan, loaf style, and cook for 1 hour. During the last 15 min. of cooking, pour some of the BBQ sauce over the top.

Works great with peanut butter chocolate muscle milk, u can even add real peanut butter for some sweetness and a bit more protien.

When im running late or in a hurry in the morning i make a protien shake and throw the oats in, shake it up and chug... if u hate oats its a good why to take them in with out eatting them
this isnt really a recipe but I noticed lots of people hate cottage cheese. I take 1-2 cups of cottage cheese and combine it with a vup of no sugar added yogurt. I like bannana or vanilla. Mix em together and the qogurt completely masks the flavor of the cottage cheese. Solid 35-40g bedtime casein snack.

Chicken or Steak burritos ala diesel
12-16 oz of chicken breast or flank steak cut into fajita size strips
Some chopped up green onion and some chopped garlic
Jasmine rice
hot salsa or hot sauce (sriracha hot chili sauce is my fave)
burrito shells
shredded cheese of your preference
Heat up some olive oil in a pan and quick fry the meat.
When the meat is cooked add the green onion and garlic and stir fry for 45 seconds or so
Turn heat down and and some of the hot sauce and stir it in.
Heat burrito shell and cheese in microwave for 25 seconds and then spoon stir fry and and rice into shell, roll up and eat.
Its a quick, tasty way to get some calories down. I like it after my afternoon workouts because its quick easy and not very messy.
enjoy!
I'm not sure where I got this idea, but I believe it was somewhere around here.
I'm usually too busy in the morning to cook a real breakfast, so I just make a burrito to go.
3x Egg Whites
1x Whole Wheat Tortillas
1 oz. Low-fat Mexican Blend or any kind of cheese
Take the eggs, and nuke them in the microwave for 1-1.5 mins. Sprinkle the cheese or slices of cheese on the tortilla, and heat that up for 20-30 secs. Put the eggs on the tortilla and add a lil' salsa. Roll up and enjoy.
Sometimes I will mix some oats in with the eggs when I'm in need of some carbs. They don't taste too bad.

It's rolling into that time of year after today, so here's an Egg Nog Recipe that's pretty good:
Raw Egg Nog Recipe
Here is a delicious raw egg nog recipe:
4 raw free-range organic eggs
2 cups raw pasture-fed milk
1 cup raw pasture-fed cream
1/8 - 1/3 cup natural sweetener (such as: unheated honey, or rapadura)
1 teaspoon fresh ground nutmeg
1) Separate eggs yolk and whites.
2) Blend egg yolks with sweetener and a touch of cream (to taste).
3) Separately blend egg whites until soft peaks are formed (whisk may
be required). Egg whites are optional. You can also make creamy egg
nog by blending the whites with a small amount of cream, this makes it
less fluffy and adds a creamy texture to it.
4) Combine everything together.
Peace,
Kevin
