Ok..I thought whether or not I should add the recipe and figured why not. You guys need a treat and this is not too bad but it tastes like it is. Its super easy to make. The only thing is that I never made a small portion of it. Thismakes a huge tray..so I suggest you share among friends or you will eat it all yourself. Then you will blame me for you all gettng fat!

If you like eclairs....yes, eclairs...you will absolutely love this and it will be a favorite of yours forever..I promise.

ECLAIR CAKE (Food TV)
makes 20-24 servings

Cake:

1 (1lb box graham crackers. (I used the low-fat ones, but the cinnamon are nicer)

2 (3 1/4oz) boxes instant french vanilla puddig (I used the sugar free/fat free type)

2 1/2 cups milk (I used lowfat and tried skim milk)

1 (8oz) thawed cool whip (I used suagr free)

Frosting:

1 1/2 cups powdered sugar
1/2 cup cocoa powder (hersheys)
3 tbs butter, soft
1/3 cup milk (lowfat or skim is fine)
2 tsp light colored corn syrup (you can try honey, I have not tried honey yet)
2 tsp vanilla extract

Butter or spray with pam the bottom of a 13x9x2 inch pan (aluminum is best)
line bottom with graham crackers evenly. With a mixer, mix pudding with milk and beat at med. speed for 2 min. Fold in whipped topping. Coat layer of graham crackers generously with some of pudding mix then layer again with crackers. Keep layering until your done with pudding...maybe 3 layers total?
For frosting, blend suagr and cocoa, add butter and milk and mix well. Add corn syrup and vanilla. Stir until creamy and cover top layer of cake completely with frosting.

Chill 24 hours.

You will absolutely love this! Its addictive too!

Toni, that sounds absolutely delicious... but all my friends are 2 hours away...

so ill just let everyone else try it.. cuz i'm craving something sweet BAD right now... and i don't need the stress of denying myself. lol ;)
