Have not tried it (seems a shitload of effort). But its really nice to know how to do it.
As for amount of protein/ serving....?

Instructions
Things You'll Need:
Natural yogurt
Cheese cloth or coffee filters
Colander
Large bowl
Saucepan
Spoon
Large baking sheet lined with wax paper or parchment paper
Additional wax or parchment paper
Coffee grinder
Jar with a tight fitting lid or resealable container

Step 1
Place the colander over a bowl and line the inside of the colander with either cheesecloth or coffee filters.
Step 2
Place the yogurt into the colander and place the colander and bowl in the refrigerator overnight to strain. The next morning, you will have yogurt cheese in the colander (which can be used for other recipes) and whey liquid in the bowl. The amount of whey from each batch will depend upon the brand of yogurt used and the amount.
Step 3
Measure your whey liquid. It should be at least 3 cups. This will be cooked down for a long time, and the result will be a quantity much less than the liquid. If you do not have at least 3 cups of whey liquid, you will need to repeat steps 1 and 2 with more yogurt until the required amount of whey has been made. Until you amass the proper amount, store the whey in ice cube trays in the freezer.
Step 4
Place the whey liquid (or ice cubes) into a saucepan over medium heat and bring to a boil. Lower the heat to low and simmer until the liquid turns a thick caramel color.
Step 5
Pour the thickened whey onto the parchment or wax paper lined baking sheet and let cool completely. This will take about one hour.
Step 6
Place another sheet of wax or parchment paper on top of the solid whey, and use a heavy saucepan to break the solid whey into small 1" pieces.
Step 7
Allow these pieces to dry for 2-3 weeks at room temperature. Do not store them in the refrigerator or in an air tight container since those methods will prevent them from completely drying out.
Step 8
Place a handful of the broken, dried pieces into a coffee grinder (mill) or a mortar and pestle and grind to a fine powder.
Step 9
Store the powder in a jar with a tight fitting lid or in a resealable container.

How much yogurt and what kind is recommended? I wouldnt mind giving this a try...
