View Full Version : Hickory Smoked Lamb Shank

Another recipe I made for charcoal grilling:

Ingredients:

3 lamb shanks
ground pepper
salt
chili flakes
herb mix (thyme, rosemary, oregano)
olive oil
hickory smoker chips
A1 steak sauce

Directions:

1) Set aside hickory chips and soak in a bowl of cold water for 20 minutes.

2) Place lamb shanks on a clean plate. Generously cover it in ground pepper, chili flakes, and herbs. Add salt to taste.

3) Cover the lamb in olive oil to seal in the juices.

4) Set up the charcoal grill. When charcoal gets enough heat, take the hickory chips out of the water and place them on top of the charcoal.

5) Place lamb in grill when hickory chips have been placed inside.

6) Cook until lamb is medium rare or nearly well done.

7) Drizzle with A1 sauce and serve.
