View Full Version : Poached eggs w/ bacon, spinach and parmigiana cheese

Old italian recipe my parents made often:

1 1/4 lb spinach, chopped
6 slices bacon
4 eggs
1/3 cup shaved fresh parmigiana or pecorino cheese

Boil spinach until just wilted, drain and cover to keep warm.
Heat large skillet and cook bacon until crisp, drain on paper towels and cover to keep warm.

Clean skillet and half-fill with water. Bring to a boil. One at a time, break eggs into cup then gently pour into skillet. Allow water to return to a boil. Cover skillet and turn off heat. let stand 4 minutes or until a light film of eggwhite sets over yolks. One at a time, remove eggs using a slotted spoon and place on towel-lined plates to blot up poaching liquid.

Divide spinach among 4 plates, top each with bacon, one egg and sprinkle with cheese.

I think ill put it all on one plate and eat it all myself... it sounds too good to share lol

That would be fine for you...you could always use lower fat bacon or canadian bacon. This dish is special because of all that's going on in such a small dish. The creamy texture of the poached egg, the crispy bacon, the mellow flavor of the spinach and the sharp cheese...they all blend beautifully together...Italians like it simple but very tasty with loads of texture...ENJOY..you deserve it!

Take your time with the poached eggs..just follow it like I said, dont rush it. This type of dish is made with love, you treat it gently it will taste like heaven.
