(Makes 12 servings)

Ingredients:
• ¾ bag soy crumbles
• 1 large can of tomato sauce
• 1 package whole-wheat lasagna noodles, uncooked
• 1 container fat-free ricotta cheese (small)
• ½ large zucchini, thinly sliced
• 1 cup low-fat mozzarella cheese, shredded
• 2 tbsp Romano cheese, grated

Directions:
Heat soy crumbles in microwave for 1 minute. Add half the can of tomato sauce, stir and microwave for an additional minute. In a large casserole dish, layer noodles, ricotta cheese, grated Romano cheese, soy crumble mix and zucchini until dish is nearly full. Pour remaining tomato sauce on top. Bake at 350°F for 30 to 40 minutes. Add the low-fat mozzarella and cook for 10 more minutes. Allow to cool. Cut. Serve.

Note: You can substitute the soy crumbles with a variety of mixed steamed vegetables. My favorites include mushrooms, yellow squash, spinach, broccoli and Brussels sprouts.
