View Full Version : Herb Infused Steak & Potatoes

Ingredients:

1 8-oz. sirloin steak
6 oz. baby red or fingerling potatoes
1/2 cup water
1/8 cup chopped onion
1/8 cup lemon juice (bottled)
1 garlic clove, chopped
1 Tbsp fresh chopped rosemary
1 Tbsp fresh chopped sage
1 Tbsp fresh chopped basil
1 tsp olive oil
2 bay leaves
Salt & pepper to taste

Directions:

In a small bowl, combine all the ingredients & mix well. Add the sirloin & potatoes to the mixture, & refrigerate. You can marinate the steak anywhere up to an entire day or from an hour to 24 hours. To cook, preheat your oven to 350 degrees for 20 minutes. Place the potatoes in an oven-safe pa, leaving enough space to add the steak later. Drizzle some of the marinade in the pan. Cover & place in the oven. Bake the potatoes for 20 minutes. Then, uncover, add the sirloin & cook 10 more minutes if you like steak cooked medium. Add a bit more marinade at this time if the potatoes have dried out. Cook five more minutes for medium well.
