People do not realize that you need to find the foods that digest great for you
Just because they are labeled "Clean" does not mean they always sit well from one person to the next. Another reason why i stick to things like COR, Rice Cakes & Rice just like in the video. Potatoes, oats tend to bloat me so I neglect them and stick to the foods that work. Nothing magical here. Find what works for you, find what digests right. Eat the proper amount for your goal.. Rinse/Repeat.

If you were to hit a plateau in weight gain, what macro would you increase first? Considering you are already supplying your body with enough EFAs and protein?
Well in this scenario, protein is already maxed out. So it comes down to fats and carbohydrates. If I am still able to handle more carbohydrates I would increase carbs, likely around my workout. I would also test my fasting glucose and 2hour glucose tolerance test to check for how I am handling carbohydrates. Of course if I increase carbs and fat gain is occurring I know to either back down or maintain that level.
Yes you could standardize the test your self with the same carb source. So test glucose fasting, drink 75g carbohydrates diluted in 8oz water, wait 2 hours then test glucose again. Glucose levels should be less than 140mg/dl.
I also track my A1c. Last offseason it got up to 5.6, this year Im at 5.2. I contribute it to keeping cardio in, taking glucose disposal products, and less cheat meals. My carb intake is also higher this year too.
