Cook the noodles al dente according to the directions on the package. Drain them well then lay out on waxed paper to prevent them from sticking to each other. Heat a large nonstick skillet over a medium-high heat. Add the beef and cook until no longer pink, breaking it up into small pieces as it cooks, about 3 minutes. Transfer the meat to a plate, discarding any fat remaining in the pan. Add the oil to the same pan and heat over a medium-high heat. Add the mushrooms and cook, stirring occasionally until all the liquid has evaporated and they begin to brown, about 5 minutes. Return the meat to the pan. Stir in 2 cups of the tomato sauce and simmer for 2 minutes. In a medium bowl combine the ricotta cheese, spinach, egg, the salt, the pepper and nutmeg. Spread 1 cup of tomato sauce on the bottom of a 9 by 13 inch baking dish. Place a layer of lasagna noodles on top, touching but not overlapping. Spread half of the ricotta mixture on top of the noodles. Add another layer of noodles. Top with half the beef-mushroom mixture. Repeat with another layer of noodles, then remaining cheese mixture, more noodles, then remaining beef mixture and finally 1 more layer of noodles. Top the final layer of noodles with the remaining sauce, then sprinkle with the grated cheeses. Cover loosely with foil and bake for 45 minutes. Uncover and bake for 15 minutes more.

if I fry chicken, but don't put any oil in and let it fry in it's own juices that is obviously worse than grillin it right?
Also, what fish would you say is the leanest/tastiest in your opinion. I am going to costco this weekend to get some plain bulk fish and do not know what to get. I am pretty sick of salmon (unless it is sashimi that is!) so what do you suggest?

You need to put something in pan or else it is going to be a sticky mess .. If its not breaded you can still use a spray pam and cook it in a pan thats cool.
Make this in advance when your on the run. Throw it in the micro and eat it on the way. Throw some meat in there to up it even more.
Ingredients
1 teaspoon olive oil
1 garlic clove, minced
3 cups baby spinach leaves
3 whole eggs, plus 4 egg whites
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 yellow onion, chopped
1/4 cup minced red bell pepper
3/4 lb red potatoes, peeled and shredded
2 tablespoons chopped fresh basil
1/4 cup shredded part-skim mozzarella or provolone cheese
Directions
Preheat the broiler. Position the rack 4 inches from the heat source. In a large, nonstick frying pan with a flameproof handle, heat 1/2 teaspoon of the olive oil over medium heat. Add the garlic and saute until softened, about 1 minute. Stir in the spinach and cook until it wilts, 1 to 2 minutes. Transfer to a bowl. Set the frying pan aside.In a bowl, whisk together the whole eggs and egg whites. Stir in 1/4 teaspoon of the salt and the pepper. Set aside.Return the frying pan to medium heat and heat the remaining 1/2 teaspoon olive oil. Add the onion and saute until soft and translucent, about 4 minutes. Stir in the remaining 1/2 teaspoon salt, the bell pepper and the potatoes and cook until the potatoes begin to brown but are still tender-crisp, 4 to 5 minutes.Spread the potatoes in an even layer in the pan. Spread the spinach evenly over the potatoes. Sprinkle with the basil. Pour in the beaten eggs and sprinkle evenly with the cheese. Cook until slightly set, about 2 to 3 minutes.Carefully place the pan under the broiler and broil until the frittata is brown and puffy and completely set, about 3 minutes. Gently slide onto a warmed serving platter and cut into wedges. Serve immediately.

1/2 cup flax seed - ground it via coffee bean grinder
3 bananas, mashed
1/4 cup vegetable oil
1/2 cup splenda
2 egg whites
1-1/2 cups protein powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup whole flax seeds

6 scoops of Just Whey Chocolate or Vanilla
1 tbsp. of baking soda
¼ cups of almond-flavored sugar-free coffee syrup
16 egg whites
½ cups of almond butter
1 cups of unsweetened applesauce (or substitute 1 cups of ground apple instead)
½ cups of slivered almonds
Preheat oven to 325°F degrees. Mix first four dry ingredients together in large mixing bowl. Mix the syrup, eggs, almond butter and unsweetened applesauce in separate bowl with blender. Blend until smooth. Gradually add dry ingredients into the bowl, blending constantly on low until completely blended. Spread ingredients evenly onto a cookie sheet sprayed with nonstick cooking spray. Bake 20-25 minutes.

1 tsp. of baking soda
1 tsp. of baking powder
Preheat oven to 325°F degrees. Mix first three dry ingredients together in large mixing bowl. Smash the four ripe bananas in another bowl and then add the eggs, unsweetened applesauce, sugar free coffee syrup, baking soda, baking powder and Splenda with a blender. Blend until smooth. Gradually add dry ingredients into the bowl, blending constantly on low until completely blended. Slowly add Choc Chips and stir by hand so you dont break up the chips. Spread ingredients evenly into two medium sized bread pans that have been sprayed with nonstick cooking spray. Bake at 325°F for 50-55 minutes.

8 oz. of ground/chopped Almonds
1/2 cup of Sugar Free Maple Syrup
1 cup almond butter.
Preheat oven to 350 degrees. Mix ingredients together in large mixing bowl. Spread ingredients evenly onto a cookie sheet sprayed with nonstick cooking spray. Bake at 350 for 1 hour - 1 ½ hours. Halfway through baking time, turn granola over in pan and break up in pieces.

1 cup cooked whole wheat pasta
2 cans tuna
1/2 cup cherry tomatoes sliced in half
Balsamic vinegar
Italian Seasoning
Salt
Pepper
Mix it all up and eat. Thats good eats.

Tuna Cakes
1 can tuna
1 egg
1 tablespoons fat free mayonnaise
1 tablespoon breadcrumbs
Salt and pepper
1 teaspoon grainy mustard
1/4 cup EVOO
Juice of 1/2 lemon
1 romaine heart, cleaned
2 small tomatoes, sliced
In small bowl, mix tuna and egg together and season to taste. Add mayonnaise and breadcrumbs and mix together. Form tuna mix into two small cakes and set aside. Make dressing by mixing mustard, olive oil and lemon juice and season to taste. Add olive oil to a small frying pan and place tuna cakes in pan over medium heat. Cook to golden brown on both sides. Dress romaine with mustard dressing. Place tomatoes on plate, put romaine on tomatoes and the tuna cake on top. Drizzle with remaining dressing.
Throw it on some whole wheat buns for some solid carbs.
