Ingredients:
6 oz. pork chop, 1-inch thick, fat trimmed
1 tbsp. fresh herbs (parsley, oregano, chives) chopped
1/4 cup low-sodium chicken stock
1 tbsp. onion, chopped
1 tsp. Dijon mustard
1 tbsp. extra-virgin olive oil

Directions:
Heat oil in a saute pan over medium. Combine the herbs in a small bowl. Coat pork chop withherbs & place in saute pan. Brown both sides (2-3 minutes per side). Add chicken stock, onion & mustard. Cover & cook for approximately 10 minutes. Remove to a serving dish; drizzle remaining sauce from pan over the pork chop, & serve.
