I just made these for the first time last night and they were SO GOOD. Paired it with spaghetti squash and some tomato basil sauce.
Easy to make and portion out so it'd be a perfect prepped meal for cutting.

Meatballs- Depending on how you portion it out, can vary in nutrition.
I made 9 servings, 2" diameter balls

1lb 99% Lean ground turkey
1/4 onion
2garlic cloves
1 tbsp extra virgin olive oil
3 handfuls of baby spinach
40g oats, ground up to a flour consistency
1 egg
1/4 cup 2% milk
1/8 cup parmesan cheese
salt
pepper
dried basil
crushed red pepper

Preheat oven to 375F

1. Dice the onion, mince the garlic, and chop up the spinach.
2. Heat EVOO in a pan over medium-low heat, saute onions until it softens and add garlic. Once onions are translucent and garlic is cooked, add spinach and cook until wilted down.
3. Mix ground oats, egg, milk, cheese, and spices in a bowl. Add the veggies to the bowl.
4. Add the turkey and combine all together.
5. Roll mixture into balls in about 2" in diameter. Spray your hands with Pam to make it easier to form in your hands.
6. Bake in the oven for 18minutes. Then, heat a skillet up with cooking spray and toss the meatballs for a few minutes until they brown a little on the outside.

Each meatball - 161 calories, 22g protein/ 7g carbs/ 5g fat
