      Chicken meatballs

We make these a lot and even use them when meal prepping

      3lbs ground chicken
      2 tablespoons chopped parsley
Either crushed garlic or garlic powder
1-2 cups of ground Parmesan cheese

Just mix everything and make 2 inch meatballs. We cook them in a pan. Real easy.

For a variation you can put some teriyaki sauce in the pan when the meatballs are mostly cooked to kinda deglaze the pan. Serve over some rice and spoon some of the sauce on top with some green onions.

      Correction:

      It’s 8 ounces of Parmesan
      And there’s 2 eggs too

I was going to ask about the no eggs part. I just made these with turkey - so good!

It’s pretty simple. You can use whatever meat. We prefer the ground chicken. I did ground pork once and it was awesome, but the wife isn’t a fan of pork.

Well Im working on cutting out red meat from a majority of my food consumption( following Beast's advice) ...so im excited for new things. I just realized this last weekend that vegetables are actually tasty if cooked right.

We hit this Mediterranean Street Food place last week and I was loving the salads more than anything. Always been a meat and potatoes (and rice) guy, but I appreciate the veggies more now.
