      Smoke and Fire

Seems like everyone has some kind of smoker now. There’s even a few BBQ competition shows on TV. I have a pellet smoker. So what’s good? Anyone got a favorite protein coming off the smoker, Blackstone griddle or grill this summer?

I’ve loving a chuck roast lately. A couple hours in the smoke, a couple hours wrapped in foil then it goes into a cooler wrapped in a big towel for an hour. Amazing. Chuck roast is kinda like a brisket. Smaller and cheaper. The last brisket I got was $70. Last week I looked at one and it was over $100. I spent $30 on 2 chucks last time. They were buy one get on half off, so easier on the wallet.

I feel ya on the price. I've been leaning heavily on cheap pork for a while now. I don't have near as much chicken and beef as I used to. There's been some canadian geese at work that have been tempting fate lately.

Ever tried deer meat? I'm not sure what state or commonwealth you are in bro, but here in Pennsylvania, we have plenty of deer meat to go around. Breakfast sausage, jerky, patties, if you have someone who knows how to process it correctly with the right recipe of spices, it tastes wonderful!

Illinois is full of many arbitrary rules and I don't really want to play the game.
