Guys, i own you an apology for not responding to your questions earlier, but i've spent two months back in my old city, waiting to be called for a new job but unfortunately it didn't start. Working out was only one or two times per week which hurt my goal of cutting for this summer.
I'm back to the city where i was before, and I've started working out again early July and i'm now back on track and made more changes to my diet. Let's see if i can set a plan based on your advise.
By the way, i didn't expect you would think i was speaking literally when i said i only wanted to lose belly fat. I'm aware that fat is lost throughout the body.
So, for 3x weekly workouts and mountain biking, 2 or 3x weekly my diet is this:
Breakfast:
3 whole eggs
1 can of tuna
1 banana
1 pear
1 coffee
Mid morning snack
Shake with 140grs oatmeal with 1 scoop whey protein
Lunch
Usually 100-150grs of chicken meat
100grs of vegetables, usually a dish we call in my country, called "Jardineira", which is composed by small pieces of carrots, green beans, green peas and potato
Salad with lettuce, tomato and a few pieces of mozarella
A bit of watermelon
Mid afternoon snack
100grs chicken meat
50-80grs of "Jardineira"
Dinner
100grs of Jardineira
100-150grs chicken meat.
Watermelon or melon
Before bed
1 scoop casein
30-50grs of peanuts.
I've cut the rice and i now also do 20min cardio after working out (but no on leg day)

Well... this question can only be answered by someone who knows how you are progressing.
Are you getting closer to your goal with your current setup?
If yes, donīt change anything until progress stalls. If not, cutting "pure fuel" calories such as dried fruit is the first thing I would recommend.
Apart from that your diet seems ok.
I wouldnīt call it a cutting diet since it contains a lot of fruit, unnecessary treats, and things you donīt know the exact macros of.
BUT, and this is the most important thing, if it works for you donīt change a thing.

I've started this diet about 2 weeks ago and so far i can say i don't feel so bloated at the end of the day and performance haven't dropped. I would like to keep it for a couple of weeks more to see how will i progress and then make changes if needed.
About the fruits, i live in a southern european country, so i'm used to a Mediterranean diet and with the high temperatures it feels good eating watermelon and pears. No need for ice cream ;)

I've dropped the mozzarella because i really cannot handle milk and it's derivates. Since i've dropped milk two years ago the persistent acne on my back has gone away and now with this cheese it's coming back again, although not like it was before.
I'm also eating peanuts every other day instead.
As far as my body goes, i've dropped weight, some muscle has gone and my belly fat seems decreasing although a bit shy.
Is it me or the lack of carbs is making me less confident (i'm not a very confident guy and it's getting bad), depressed and sad?

You havenīt lost ANY muscle whatsoever. Trust me.
You might feel a little less pumped but all the meat that was on you before you cut calories is still there.

Somehow, i haven't lost strength and training intensity is the same since i drink a cup of coffee and take BCAA/Glutamine before training.
I'll trust you on that. I was feeling a bit frustrated but i will keep going.
Something i haven't mentioned are supplements. I'm taking BCAA/Glutamine, WHey, Casein, Omega 3 and T-Matrix (A test booster). Any advise on adding creatine?
