The wife and I stayed at a bed & breakfast last week for the first time. Our first breakfast started out with baked oatmeal. I never considered baking oatmeal before. Being the meathead I am, I realized the post workout potential of this dish immediately.
Baked Oatmeal
2 cups OLD FASHIONED oats - not instant
3/4 cup brown sugar
1 cup chopped walnuts divided
1/2 cup raisins
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
2 eggs
2 cups milk
1 tsp vanilla extract
4 tablespoons melted butter
2 apples peeled and chopped
Preheat oven to 325
Grease 8-9 inch baking dish (I just used PAM)
In a bowl combine oats, brown sugar, 1/2 of the nuts, raisins, baking powder, cinnamon and salt
In another bowl, scramble the eggs, add milk and vanilla and mix well
Add the milk mixture and melted butter to the bowl with the oats
Put the chopped apples in the bottom of the baking dish and cover with the oat mixture. Sprinkle the remaining nuts on top.
Bake at 325 for 40 minutes
Done.
Let cool some before eating. This keeps well in the fridge.
You can use other fruits. What we had at the B&B had blueberries in it with fresh blueberries on top.
